Quinoa & Couscous Salad

Cold Quinoa & whole wheat couscous salad.
There’s a place in town that makes a whole wheat couscous salad just like this but I have made a few alterations for health reasons and taste. It’s great on a day thats too hot to cook, or if you’re craving something light ,crisp and filling!

Ingredients
quinoa
whole wheat couscous
cherry tomatoes
fresh basil
cucumber
Extra virgin olive oil
Lemon

Cook 1/2 cup whole wheat couscous, after cooked let the couscous sit to cool
I had previously chilled and cooked quinoa, so I added 1/2 cup COOKED quinoa to the bowl,
Chop up cherry tomatoes, and cucumber. break up fresh basil leaves I used about 4 medium sized ones
Once the quinoa , couscous are cooled, add them to the bowl, mix in 1 tablespoon olive oil and squeeze fresh lemon juice onto the salad, mix add s&p to taste
